Rainbow Root Veg and Sausage Tray Bake with Pesto

This meal was only originally going to be an Instagram story, but it was so good, I made it, ate it, and came straight to my desk to share it!

You need (served 4)

3 Carrots
2 Onions
2 lrg Potatoes
3 Parsnips
1 bunch of Beetroot (around 450g)
8 Sausages
Green Pesto
Fresh thyme

Start by chopping your potato, carrots and parsnips, boil the potato and carrots in a pan of salted water for 5 minutes, then add the parsnips and boil for 3 more minutes.

Meanwhile, chop the onion and beetroot into quarters.

Drain the veg from the pan and then spread out on a baking tray. Add the onion, drizzle with olive oil and use tongs to coat all the veggies. Nestle the beetroot in between the other veggies and roast for 20 mins. Remove from the oven and add the uncooked sausages to the tray with the thyme (I used some leaves sprinkled all over and some extra sprigs for flavour) and some small spoons of pesto, half-way through cooking remove from the oven and turn the sausages, and use the tongs to move the veg around the pan to coat in the pesto and continue to cook until the sausages are cooked through.

Remove from the oven, discard the thyme stems and serve immediately, top with an extra spoon off pesto if you fancy it! Enjoy!
