Easy Slow Cooker 5 A Day Veggie Tagine and Fruity Cous-cous

This recipe is stuffed full with plenty of veggies, try swapping veggies around to suit your family and your budget. I tend to use what we have in, or what we have found in the end of day yellow sticker baskets. There are no rules, just chose between 5 and 8 veggies chop it up, chuck it in the slow cooker, add your spices and it is ready to go! Use a 'just add water' sachet of flavoured cous cous for a fuss free tea your family will love!
You need:
oil of choice
4 carrots
6 new potatoes
3 onions
2 peppers
2 courgettes
1 tsp each ground cumin, paprika, cinnamon and mild chilli powder
400g can chopped tomato
Water
2 tsp honey
250g couscous
300ml vegetable stock
125g ready-to-eat apricots, roughly chopped
50g raisins
Roughly chop all the veg and chuck it into the slow cooker.
Add the tomatoes, honey, half a can of water and the spices.
Stir well and cook for around 6-8 hours.
Before serving make up your fruity cous cous, empty the sachet of cou-cous into a bowl, add the raisins and apricots and add the hot vegetable stock. Leave for 5-10 minutes until fluffed up and all the water has gone.
