One Pot Sweet Potato, Kale and Red Lentil Stew

There is nothing more satisfying than a warm and filling stew on an autumns evening. This is perfect for those days when the whole family are eating at different times due to clubs, working late, etc. A stew you can just cook in just one pan and reheat as needed, or alternatively cook in the slow cooker.
You need:
Olive Oil (a good old glug!)
3 Leeks (chopped)
1 onion (sliced)
1 can plum tomatoes
2 medium sweet potatoes (cubed)
2 handfuls kale
1/2 cup dried red lentils
1/2 tsp dried thyme
Salt and pepper
Between 6-8 cups vegetable stock
Heat the oil in a deep pan add the leeks and onion to soften them.
Add the tin of tomatoes and break them up as you stir them round.
Add 6 cups of vegetable stock, sweet potato, kale, lentils and thyme, salt and pepper and simmer until the lentils and potatoes are tender, around 20-25 minutes, adding more vegetable stock if you need to (I think I added 1/2 cup extra)
Alternatively use tinned red lentils and chuck everything in the slow cooker for 6-8 hours. Cooking in the slow cooker will use less veg stock, but just use enough to cover all the veg and lentils.
