Subway Style Meatball Marinara

This is one of the kids favourite meals, its so easy to make, with a handful of ingredients from the store cupboard.

 

This is one of the kids favourite meals, its so easy to make, with a handful of ingredients from the store cupboard you can make a subway style meal for half the price of a restaurant bought meal. 

MAKES 6

To make the marinara sauce you need: 
1 can plum tomatoes
1 onion
2 cloves garlic, left whole
2 tablespoons olive oil
1 teaspoon dried oregano
* Pinch of red pepper flakes

To make up the rolls:
6 finger rolls
30 meatballs (we use pre-bought meatballs, but you can make your own) 
Cheese slices (chilli cheese makes these taste insane!)

Start by chopping the onion and garlic. 
Heat some oil and start cooking your meatballs. 
To make the marinara sauce combine the tin of tomatoes, diced onion, garlic cloves, olive oil, oregano and red pepper flakes, in a deep pan. Bring the sauce to a boil then lower to a slow simmer for at least 20 minutes, Stir occasionally using a wooden spoon to crush the tomatoes against the side of the pan. You may want to leave the sauce simmering for longer if you want a thicker sauce. 
Once it is at your preferred thickness leave to cool slightly and blend until smooth. Once the meatballs are fully cooked, add the sauce and warm through.
Whilst it is warming, half your bread rolls and toast them, insides upwards, under a warm grill. 
Once grilled, but the tops of the rolls to the side and load the bottoms with meatballs and sauce, top with cheese and pop it back under the grill until the cheese is nice and melted. 
Enjoy with a sauce of choice and any salad for a true fakeaway subway experience. 

Once completely cooled any leftover sauce can be kept in a clean recycled jar for about 5-7 days in the fridge.
